Production
The Pampolat variety is an ancient remnant and part of Viver’s cultural heritage. This grape variety, which was believed to have been lost in 1915 following the arrival of the phylloxera plague in the Alto Palancia region, has been revived thanks to the effort and dedication of a group of people committed to its legacy. Sourced from vineyards planted on calcareous and loamy soils in small plots located at altitudes between 450 and 700 meters, this wine has been aged in 50-liter demijohns to preserve its purity and delicacy.
Tasting Notes for the Ochenta y Siete Cubos Red Wine – Pampolat
A medium-bodied wine, clear and transparent, with brick-red hues and beautiful ochre highlights. On the nose, it takes us to a floral and herbal world that transports us to a fresh Mediterranean landscape, with abundant notes of rockrose, wild thyme, thyme, fine rosemary, bay leaf, and garrigue, finally intertwined with subtle iron-like notes reminiscent of rodeno, which is very characteristic of the Viver region. On the palate, this wine is ethereal and very well-balanced. Its aging in glass demijohns lends it delicacy and harmony, conveying its origin unfiltered—in a very honest, clear, and direct way.
