A tear, pure liquid gold

Lágrima EVOO is our flagship product, made from the first olives of the harvest using cold-press extraction, which guarantees its purity and high antioxidant content. With an acidity level of just 0.1% (remember that extra virgin olive oil must have an acidity level below 0.8%), this is a premium, top-quality oil whose main characteristics are:
- Composition: 100% from the mountains.
- Harvest: early, in mid-October.
- Flavor: intensely fruity with notes of freshly cut grass.
- Production: Cold pressing within just 4 hours of the olives’ arrival at the mill, followed by storage in a nitrogen-protected atmosphere.
Lágrima is Viver’s signature extra virgin olive oil, characterized by its intense fruitiness, with aromas of freshly cut grass, green apple, almond, and nuts, accompanied by hints of fig, artichoke, and a touch of blackberry. Its dense yet fluid texture stands out on the palate, filling it with a predominant apple flavor, followed by notes of green almond, alloza, and aromatic herbs such as pennyroyal and spearmint. Lágrima reflects, like no other, the great flavor potential offered by the Palancia mountain variety.
Vivarium Green: fruity, fresh, and intense
Vivarium Green EVOO is a blend of olives harvested during the veraison stage, the moment when the fruit begins to turn from green to black. It is the second oil we produce during the harvest season, ideal for lovers of intense flavors, and its main characteristics are:
- Composition: 60% Serrana and 40% Arbequina, Picual, and Villalonga in varying proportions.
- Harvest: during the ripening phase, between October and November.
- Flavor: bold and fresh.
- Production: Cold pressing within 12 hours of the olives’ arrival at the mill.
Vivarium Green has a medium fruitiness with fresh aromas of apple, almond, nuts, and subtle hints of banana and tomato. Its smooth character is complemented by subtle spicy and bitter notes, contributed by the Picual and Villalonga varieties. Ohsade Eco: gentle, delicate, and eco-friendly

Our Ohsade Organic EVOO is produced using sustainable agricultural practices, without the use of pesticides or chemical fertilizers. It is the third EVOO we produce after Lágrima and Vivarium Green, provided there is a harvest, since at the moment only three members of the Viver Cooperative have organic certification for their olive groves. Its main characteristics are:
- Composition: 80% Serrana and 20% Arbequina.
- Harvest: during the ripening phase, between October and November.
- Flavor: smooth and fruity.
- Production: cold pressing within just 4 hours of the olives’ arrival at the mill.
Ohsade, the first organic extra virgin olive oil from the Viver Cooperative, stands out for its delicate fruitiness with notes of ripe olives and hints of fruit puree such as apple and plum, a citrusy touch of lime, and green aromas of fennel, bay leaf, and dried mint. Its balanced profile is rounded out by subtle hints of pungency and bitterness, offering a sweet and smooth experience on the palate, without any harshness. Ohsade is Viver’s extra virgin olive oil for those seeking more subtle sensations on the palate.
Vivarium, Viver’s extra virgin olive oil from this year’s harvest
Vivarium EVOO is our harvest-season extra virgin olive oil, the last batch we produce each season at the Viver Cooperative. It is a highly prized oil among our members and consumers for everyday use, and its main characteristics are:
- Composition: 75% Serrana and 25% other varieties in varying proportions.
- Harvest: ripe olives, between November and December.
- Flavor: slightly fruity
- Processing: Extraction at room temperature within 24 hours of the olives’ arrival at the mill.
Vivarium is a lightly fruity EVOO with notes of fresh olives, fruit compote, and hints of nuts such as almonds and walnuts. Its mild profile, with very subtle levels of pungency and bitterness, makes it a versatile and well-balanced oil. This is Viver’s most eagerly awaited extra virgin olive oil, as it is an excellent olive juice suitable for all everyday culinary uses, obtained from these four varieties grown in the Alto Palancia region.
Benabal Extra Virgin Olive Oil: Cooperative Selection
Benabal EVOO is produced by other cooperatives using the Arbequina and Picual varieties. Since it is not an extra virgin olive oil from Viver, it does not include the local Serrana variety, which is what sets our EVOOs apart and gives them their distinctive aromatic profile. We’ve added it to our lineup to meet consumer demand, especially in years when our own oils are in short supply, and we personally taste, filter, and bottle it ourselves. Benabal is a lightly fruity EVOO with notes of almond, nuts, and ripe fruit compote. Its balanced profile combines the sweetness of the Arbequina olive with the fresh, aromatic touch of the Picual, evoking tomato and fresh fruit. With moderate levels of pungency and bitterness, it offers stability without harshness, making it a versatile and harmonious choice.
